You can’t go past the sweet buttery flavour of corn on the barbie.
Ingredients:
- 4 corn cobs
- 250g Parmesan cheese, grated
- 1 tbs dried chilli flakes
- 2 lemon rinds, grated
- 1/2 cup salt
- 250g butter, soft
Method
Prep: 3o mins | Cook: 15 mins | Serves: 10 |
- Clean and soak the corn in water for at least half an hour. This helps the corn stay beautiful and juicy when cooking on the BBQ or open fire
- Take the corn out of the water, then place straight on the BBQ, turning and moving every 5 minutes until the corn’s cooked and coloured on all sides.
- While the corn is cooking, get a bag or container large enough to fit the corn. Add the grated cheese, dried chilli, lemon rind ans salt. Mix until all combined evenly.
- Take corn off the BBQ once cooked (10-15 mins), rub with soft butter then transfer into the cheese dusting mix. Finish off with a squeeze of lemons and eat away.
