Grilled Corncob

You can’t go past the sweet buttery flavour of corn on the barbie.

Ingredients:

  • 4 corn cobs
  • 250g Parmesan cheese, grated
  • 1 tbs dried chilli flakes
  • 2 lemon rinds, grated
  • 1/2 cup salt
  • 250g butter, soft

Method

Prep: 3o mins | Cook: 15 mins | Serves: 10 |

  1. Clean and soak the corn in water for at least half an hour. This helps the corn stay beautiful and juicy when cooking on the BBQ or open fire
  2. Take the corn out of the water, then place straight on the BBQ, turning and moving every 5 minutes until the corn’s cooked and coloured on all sides.
  3. While the corn is cooking, get a bag or container large enough to fit the corn. Add the grated cheese, dried chilli, lemon rind ans salt. Mix until all combined evenly.
  4. Take corn off the BBQ once cooked (10-15 mins), rub with soft butter then transfer into the cheese dusting mix. Finish off with a squeeze of lemons and eat away.
